What to do with Truffles

Damian Pike, our Wild Mushroom Specialist, is also the ‘go to’ man in Melbourne for Truffles

We spent a bit of time asking him the basics on Truffles.

What is a typical serving size?

One truffle is around 20-30gms and will easily serve 6 people.

What’s the best way to prepare them? 

Shaving truffles is the best way to prepare and serve them.  Use a grater, or, more specifically a ‘Truffle Shaver’ or micro plane.

What’s the easiest way to serve them?

Damian’s three favourite ways to serve and enjoy truffles are:

  1. Shaved truffle scattered on top of poached eggs, served with wild asparagus.
  2. Shaved and mixed with butter. Put mixture into freezer until it’s solid. Slide the mixture under the skin of a Chicken Breast ready for roasting. Delicious!
  3. Shaved and scattered over a light-style pasta.

Did you know?

The truffle is an edible fungus that grows underground through a symbiotic relationship with the roots of suitable host trees.

Specially trained dogs are used to sniff out the truffles (they used to use pigs!).

“I make a rich potato mash with cream and butter and mix in some shaved Truffle (using a micro plane). Perfect served with a grilled lamb backstrap and a salad of beetroot, fennel and Yarra Valley feta.”
