Caramelised onion and Prosciutto tart

Pei Modern's very own Flo Gerardin shares this delicious Truffle Recipe.

  • 1 roll puff pastry
  • 2 white onions
  • 50g sugar
  • 2 green spring onions
  • 100g prosciutto
  • 20-30g truffle
  1. Preheat your oven in fan mode 180 degrees.
  2. Peel and finely slice the white onion.
  3. Bake the all sheet of puff pastry for about 20min, reduce the heat to 160c if it’s browning too much.
  4. In a large base pot, make a dry caramel and throw the sliced onions in, add salt and pepper to season.
  5. Allow all the liquid to come out and reduce till you obtain jam-like consistency.
  6. Once the pastry is baked, spread the onions on top and topped with the finely sliced spring onions.
  7. Spread the finely sliced prosciutto evenly and shave or grate all the truffle on top.
  8. Slice your caramelised onion and prosciutto tart as you wish and enjoy
