Classic Fig Tart

A beautiful way to showcase summer figs.

  • 30g chopped almonds
  • 75g butter
  • 1 egg yolk
  • ½ tsp finely grated lemon zest
  • 50g icing sugar
  • 125g plain flour
  • 6-8 fresh figs
  • 1 tbsp brown sugar
  • 1 tbsp fig jam
  1. To make the pastry, cut the butter into cubes and place all the pastry ingredients in a food processor. Blend until a ball forms.
  2. Wrap in plastic and refrigerate for 15 minutes.
  3. Roll the pastry out between two sheets of baking paper to form a circle large enough to line a flan tin.
  4. Slice the figs into four or five slices each.
  5. Spread the jam over the bottom of the pastry case.
  6. Lay the figs slices in circles to cover the pastry base.
  7. Sprinkle the figs with the sugar and bake at the bottom of the oven at 180o for twenty minutes.
  8. Cool for ten minutes then serve your classic fig tart with vanilla ice-cream.
