We Aussies love a pavlova (even if we aren’t 100% sure if it derives from here or New Zealand!).

From the scrumptious crispy outside to the marshmallowy deliciousness in the centre, a pavlova is an entertaining hit all year round.

And to help you create the perfect pav, our Ambassador, Tobie Puttock, has provided his fail-safe recipe (see below).

But what to top your pavlova with?

From seasonal fresh fruit to more exotic ingredients (think Persian fairy floss, crystalized violets, Medjool dates or goji berries), you’ll find the perfect combination of ingredients, here at the Market.

You could just stick to what’s in season to create delicious topping combinations, however, we are lucky enough to have traders from all over the world to inspire and educate us on their foodie heritage.  So to get your tastebuds tingling, we have collated our favourite pavlova toppings embracing cultures from around the world.

Note: all of these pavlova toppings start with a base of whipped cream, mascarpone or a combination of the two.

  1. The Arabian Feast – freshly cut figs, pomegranate seeds, roughly crushed pistachios and a drizzle of rosewater. Dried rose petals are the finishing touch but optional! If you love instagram food, this one is for you.
  2. English Garden – strawberries, blueberries, raspberries and other of your favourite delicious red berries. For extra sweetness add a sprinkle of icing sugar. Inspired by English country picnics and Wimbledon, this pavlova is perfect for those who love simple, fresh berry toppings.
  3. Caribbean Delight – squares of pineapple and mango with a small squeeze of lime and a sprinkle of fresh mint. Fresh and fruity, this pavlova will make you feel like you are on holiday.
  4. Egyptian Dream – cut watermelons into stars (using a cookie cutter is the easiest) and decorate. This is ideal for kids, as they can’t get enough of watermelon and they can help make the stars. Did you know that Watermelon is thought to have originated in Africa and Watermelon seeds were found in in Egyptian Twelfth Dynasty sites as well as in the tomb of Pharaoh Tutankhamun?
  5. Persian Pav – Chopped dates and walnuts with a drizzle of caramel sauce (and chocolate if you are feeling extra indulgent). This pavlova is great for those looking for something different with less of a traditional fruit flavour and lots of texture.
