The icy chill of winter is here, friends, and with the cool change comes an exciting new ‘Sourced and Seasoned’ contributor joining our ranks – food photographer, stylist, digital creator, and self-taught cook, Victoria Theng from Style My Plate! *waves*

And she hasn’t wasted any time getting started. Kicking things off for her epic winter set, Vic has spoiled us with fork-tender, soul-satisfying Beef Osso Buco – her definition of comfort food (and soon to be yours!), fresh from our Seafood, Poultry and Meat Market area, Bracher Arcade.

‘When the weather starts to get cooler than a polar bear’s toenail, my cravings for this soul-satisfying and lavish dish start to kick in.

Osso Buco is a traditional Italian dish, perfect for winter, and is my definition of comfort food. ‘Osso Buco’, Italian for bone with a hole, originally consists of fork-tender veal shanks slow-cooked and braised with aromatic vegetables and white wine.

For my version, I prefer to use beef shanks rather than veal, and like to add both fresh and tin tomatoes for a more punchy flavour. Topped with anchovy gremolata and served with couscous, this is a rich and elegant dish you will want to make all winter long.’

Hi, my name is Victoria and I am a freelance Melbourne-based food photographer, stylist and digital creator. My love for food started at a very young age, and the Prahran Market had a lot to do with that. 

The Prahran Market has been my local go-to source of fresh produce for as long as I can remember. Every Sunday, my family and I would rev ourselves up ready for our weekly shop, buying all of our ingredients for the week ahead. The fresh quality and abundance of choice, along with the friendly and relaxed environment of the Prahran Market is what gets me coming back week after week.

All of the store holders are so unbelievably warm-hearted and helpful, making each shop so seamless and enjoyable. I love how knowledgeable and passionate they all are about their produce, and their willingness to always make suggestions when I am stuck on what to cook.

I am so excited to be partnering up with the Prahran Market this winter, to bring to you a few of my favourite recipes.
