Rhubarb Apple Crumble

You can’t go wrong with this delectable traditional rhubarb and apple crumble.

  • 4 Granny smith apples, peeled, cored and chopped
  • 3-4 rhubarb stalks chopped (3cm pieces)
  • ¾ cup caster sugar
  • 2 tsp lemon rind, grated
  • CRUMBLE
  • ½ cup rolled oats
  • ¼ cup brown sugar
  • 2 tbsp plain flour
  • 50g butter
  • Optional: ¼ cup desiccated coconut
  • Optional: ¾ cup blackberries for topping
  1. Preheat oven approx. 180°c. grease small baking dish/ramekins (for individual crumbles)
  2. Combine apple, rhubarb, caster sugar, lemon rind in a saucepan. Simmer for 5 mins with lid. Add 1 tbsp water if necessary.
  3. Combine flour, brown sugar, butter, oats and optional coconut in bowl and rub mixture with fingers until mixture in crumbly.
  4. Add rhubarb and apple mixture to baking dish, top with optional blackberries and crumble mixture. Bake for approx. 20-25 mins or until golden brown.
  5. Serve your delicious rhubarb apple crumble with some clotted cream or vanilla bean ice cream.
