Recipe by Tad Lombardo

A family favourite; this is easy to make and delicious to eat!

  • 31g unsalted butter
  • 3 cups mini marshmallows
  • 1 cup sugar
  • ½ cup cream (35% Fat)
  • ½ tsp salt
  • ½ tsp pure vanilla extract
  • 340g dark chocolate (min 52%) chopped
  • 1 cup walnuts, coarsely chopped
  1. Butter a 20cm (8-inch) square baking pan and line with two criss-crossed pieces of baking paper, leaving an overhang. Butter the paper.
  2. In a large saucepan, combine butter, marshmallows, sugar, cream, and salt. Continue to cook over medium heat stirring occasionally until all the marshmallows are melted (approx 10 minutes.) Remove from heat and stir in vanilla, chopped chocolate and ½ cup of the walnuts until the chocolate is melted.
  3. Pour the fudge into the prepared pan and smooth out. Sprinkle with the remaining ½ cup of walnuts. Let cool for 30 minutes. Refrigerate until set (about 1 hour.)
  4. Using the paper overhang remove from pan and lift fudge onto cutting board and cut your chocolate fudge into squares (6 rows by 6 rows.)
  5. Sprinkle with sea salt if desired
