Spicy Sweet Pork Tenderloin

This is a quick and tasty dish, steam some rice and you've got mid-week dinner on the table in 20.

  • 1 tbsp low-sodium soy sauce
  • 1 tsp fresh ginger, minced
  • 1 tsp garlic, minced
  • 1 tsp peanut oil
  • 500g pork tenderloin, trimmed and cut crosswise into 12 (2cm -thick) slices
  • 1/3 cup tomato salsa
  • 1 tbsp raspberry preserves (preferably seedless)
  • 2 tbsp fresh coriander, chopped
  1. Combine soy sauce, ginger and garlic in a bowl.
  2. Flatten each pork piece to 1.5cm thickness using your fingertips.
  3. Heat oil in a large nonstick pan or wok over medium-high heat. Add pork to pan, spoon soy sauce mixture evenly over pork slices. Cook 3 minutes or until browned. Turn pork over; cook 3 minutes or until done. Remove from pan.
  4. Add salsa and preserves to pan, increase heat to medium-high. Cook for 30 seconds or until the sauce becomes slightly thick, stirring constantly.
  5. Serve your spicy sweet pork tenderloin with salsa mixture and sprinkle with chopped coriander.
