How to make your very own herb oil at home.
A tasty herb oil is a beautiful way to add extra flavour to your favourite dish and also makes a delicious ingredient for salad dressings.
They also work beautiful for dipping crusty bread, drizzled over fresh pasta dishes and a whole heap more.
Using fresh herbs will ensure a fresher flavour and more vibrant colour, and using a neutral tasting oil such as grapeseed oil works best too.
What you need:
A bunch of your favourite fresh herbs
A cup of neutral cooking oil
Food processor
Muslin cloth
Jar
Bowl of iced water
Paper towel
Saucepan with boiling water
Instructions:
- Wash your herbs thoroughly
 - Blanch in boiling water
 - Take out and immediately submerge into a bowl of iced water
 - Drain and pat dry.
 - Put into a food processor with a cup of oil and process until combined
 - Pour over muslin cloth, directly into a jar.
 - This will keep well in the fridge for a couple of weeks.
