Vanilla Almond Chia Pudding with giant strawberries

This Vanilla Almond Chia Pudding is a perfect breakfast dish.  Garnish with in season fruit.  In this instance, giant strawberries and blueberries!

  • 3 tablespoons chia seeds
  • 1 cup almond milk
  • 2 tablespoons maple syrup
  • 1 vanilla bean, split and seeds scraped.
  • Strawberries
  • Blueberries
  • Nuts and seeds
  1. Whisk the seeds, milk, maple syrup and vanilla beans seeds together until well combined, the seeds are all separate and there are no lumps. Refrigerate in an airtight container for a minimum of 8 hours. Overnight is better and it helps to stir occasionally.
  2. Spoon into a shallow bowl and decorate with the berries and a few seeds and nuts for texture.
