Smoked Eel with Mushrooms

  • 1 smoked eel
  • 200gr Swiss brown mushroom
  • 1 tin anchovies
  • 1/2 bunch tarragon
  1. Peel the eel and Place in 180c oven for 30 min
  2. Break up the meat from the bone and spread onto a plate.
  3. Slice the mushroom very thin with a mandoline even.
  4. Spread them to cover the plate and finished with the anchovies chopped in, half the oil from the tin and the chopped tarragon
  5. Place the plate in the oven for 5 min, drizzle with olive oil, garnish with herbs and serve.
