Slow cooked quinces w cardamom & rose geranium

This gorgeous recipe showcases delicious Autumn quinces!

  • 6-8 quinces, peeled and cut into even slices
  • 1 clean rose geranium branch (with leaves on)
  • 5 cardamom pods
  • 1 vanilla bean
  • Peel from one organic orange
  • 800g caster sugar
  • 2 litres water (or enough to cover the quinces)

If you’re planning on using these slow cooked quinces as an accompaniment for pork, add a dash of red wine vinegar at the start of the cooking process.

Steps to slow cooked quinces

  1. Place all ingredients for the slow cooked quinces into a large pot and bring to the boil.
  2. Simmer for 8 hours on a low heat until the quinces are rosy and soft.
  3. Remove rose geranium branch and vanilla bean before serving.
