Self-Saucing Chocolate and Orange Pudding

  • FOR THE PUDDING
  • ½ cup full cream milk (can substitute with plant-based milk)
  • 1 egg
  • 80g salted butter, at room temperature
  • 1 cup self-raising flour
  • 2 tbsp cocoa powder, plus a little extra for finishing
  • ½ cup brown sugar
  • Zest of one orange
  • FOR THE SAUCE
  • 2 tbsp sifted cocoa powder
  • ¾ cup brown sugar
  • Icing sugar, for finishing
  • Berries and cream or ice cream
  1. Preheat the oven to 180°C. Bring together the milk, butter, and egg, whisking to combine.
  2. Sift the flour, cocoa, and orange zest into a large mixing bowl and then stir in the sugar. While whisking, slowly add the milk mixture to the flour mixture until combined.
  3. To make the sauce, bring together the cocoa powder and sugar in a clean bowl.
  4. Spoon the pudding mixture into a greased baking dish and then sprinkle the cocoa and sugar mix over the top.
  5. Very slowly pour 1¼ cups of boiling water over the top of the pudding and bake for 30 minutes, or until the pudding bounces when gently pressed in the centre.
  6. To finish, dust with icing sugar and serve with berries and cream or ice cream.
