Pomegranate Walnut Salad

Recipe by Jo Feehan- Second Helping

A delicious salad using seasonal autumn produce.

Serves 4 as a side, 8 as part of a mezze.

  • 1 cup pomegranate seeds
  • 1 cup coarsely chopped flat leaf parsley
  • 1 cup roasted walnuts, chopped coarsely
  • ½ cup pitted green olives, chopped coarsely
  • 1 tbsp walnut oil
  • 1 tbsp olive oil
  • 1 tsp pomegranate molasses
  • ½ tsp Sumac
  • ½ lemon, juiced
  1. Combine all ingredients in a bowl. Let sit for a whole hour so that the flavours combine and saturate the ingredients.
  2. This pomegranate walnut salad is perfect as a side for Turkish and Middle Eastern dishes, grilled lamb or as part of a mezze.
