Peach and Tomato Salad with Hummus and Za’atar

This five-minute peach, tomato, and za'atar salad by The Brick Kitchen is served up on a bed of creamy hummus and mixed with slices of seared haloumi.

  • 1 can of chickpeas (warmed, then drained and rinsed)
  • 1/4 cup hulled tahini
  • 1 garlic clove
  • juice of 1/2 a lemon
  • salt to taste
  • 2 ripe peaches, chopped into wedges
  • a few heirloom tomatoes, chopped
  • Lebanese cucumber, sliced
  • a handful of mint, chopped
  • a handful of parsley, chopped
  • juice of 1/2 lemon
  • 2 tbsp olive oil
  • salt and pepper
  • za’atar
  • chilli flakes
  • haloumi
  1. Blitz hummus ingredients together in high speed blender. Drizzle in ice-cold water and continue to blitz until fluffy and smooth.
  2. Top the hummus with your peach salad. Sprinkle with za’atar and chilli flakes. Sear haloumi in a hot pan and serve immediately.
