Oysters with Cherry Vinaigrette

  • 12 Ripe cherries
  • 100ml Chardonnay vinegar
  • Salt
  • 5gm finely diced shallots
  • Sydney Rock oysters, shucked

1. Push the cherries through a fine mesh strainer or chinois
2. Add the remaining ingredients and adjust seasoning
3. Pour over oysters and serve immediately
