Mint Salad Dressing

Recipe by Jo Feehan - My Second Helping

A deliciously fresh, zingy dressing perfect for salads.

  • 1 cup mint leaves
  • ¼ cup olive oil
  • 2 tbslp white wine vinegar
  • 2 tblsp lemon juice
  • 1 spring onion
  1. Mix all ingredients in food processor on medium speed until smooth.
  2. Pour into jar.

Your mint dressing should last in the fridge for up to a week.
