Recipe by Kathy Tsaples - Sweet Greek

A traditional Greek Easter staple, Kathy's glazed, buttery and oh-so-fluffy biscuits will have you reaching for seconds.

  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 tsp baking powder
  • 7-9 cups of self-raising flour, sifted
  • 250g good quality unsalted butter
  • 6 eggs (1 for glazing)
  • 1 cup of milk
  • 1 cup of orange juice
  • 25g packet of vanilla sugar
  • 2 cups of caster sugar
  • 1 tbsp milk (for glazing)
  • sesame seed (as garnish – optional)
  1. Preheat the oven to 180 degrees celcius.
  2. Cream the butter and caster sugar until light and fluffy. Add five eggs, one at a time.
  3. Add the milk, orange juice, orange zest, lemon zest and vanilla sugar. The mixture may curdle at this stage, but don’t worry because adding the flour will rectify this.
  4. Sift the baking powder with two cups of the flour and add to the mixture. Keep adding flour, one cup at a time to form a soft, pliable dough. Let it rest while you tidy up.
  5. Shape pieces of dough into little logs and then twist them. You can also plait them.
  6. Beat the remaining egg with 1 tablespoon of milk and use to glaze the logs. Sprinkle with sesame seeds (if using).
  7. Bake for about 20 minutes then allow to cool.
