Koulourakia (Greek Easter Biscuits)

  • 125 g butter, softened
  • 150g sugar
  • 1.25 tsp baking powder
  • 65 ml warm milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 500g plain flour
  • 1 egg yolk (for glazing)
  • 1/4 cup sesame seeds (optional)

DIRECTIONS
1. Cream the butter and sugar together in a mixer using a paddle attachment until thick and
creamy.In a small separate bowl, whisk together the baking powder and milk until combined. Set
aside.

2. Add the eggs one at a time to the creamed butter and sugar mixture until fully incorporated.

3. Add the vanilla extract and the warm milk mixture and mix in manually with a spatula.

4. Add the flour in three additions, mixing with a spatula, ensuring not to overwork the dough.

5. Bring together with your hands, cover and allow to rest for 30 minutes.

6. Preheat the oven to 200C and line two baking trays with greaseproof paper.

7. Shape the biscuits into circles and or ropes as per reel. Brush with egg yolk and sprinkle
over the sesame seeds.

8. Bake for 15 minutes or until golden brown. Store in an airtight container.

Makes approximately 25 biscuits.
