Halloumi and vegie kebabs

  • 2 large zucchinis, peeled into ribbons
  • 360 grams haloumi, cubed
  • 240 grams cherry tomatoes
  • 1 onion (red or brown), cut into wedges
  • 1 tsp paprika
  • ¾ tbsp oregano
  • Olive oil
  • Fresh lemon wedges (to serve)
  1. Preheat barbecue to medium heat, soak bamboo skewers in water
  2. Briefly boil zucchinis for 2 mins, remove from water
  3. Combine zucchini, tomatoes, onion and halloumi in a bowl with paprika and oregano. Drizzle with oil and coat vegetables evenly
  4. Thread ingredients onto skewers and grill your vegie kebabs until lightly charred.
