Grilled Watermelon, Tomato and Feta Salad

  • Four slices of watermelon approx. 2cm thick
  • Four best quality tomatoes of any variety
  • Four tablespoons extra virgin olive oil
  • 4 teaspoons of good quality balsamic vinegar
  • 16 freshly picked basil leaves
  • Approx. 150g feta
  • Sea salt and freshly cracked pepper
  1. Pre-heat a bbq or grill plate over medium heat.
  2. Grill the watermelon for about a minute each side or until grill marks are visible. Remove and arrange the watermelon on a platter or individual plates.
  3. Cut the tomatoes into whatever shape you like, I normally cut them into roughly bite-sized pieces. Place them into a bowl and dress with extra virgin olive oil, balsamic and a good pinch of sea salt and freshly cracked pepper. Toss to combine and arrange them next to and on top of the watermelon.
  4. Crumble the feta up using your fingers and scatter over the tomatoes and watermelon along with the basil.
  5. Serve right away and enjoy.
