Goat Cheese baked in Garlic Thyme Oil

The recipe is designed for soft spring garlic which tastes milder than aged (dry skin) garlic.

  • 2 cloves garlic
  • 4 small fresh goat cheeses or ½ cup of goat cheese curd
  • 4 tablespoons olive oil
  • 1 tomato, diced
  • Few sprigs of thyme
  • Freshly ground pepper
  1. Heat your oven to 200 degrees.
  2. Cut the goats cheese in half, place into the moulds and cover with oil.
  3. Cut the garlic cloves into three pieces (leave the skin on) mix with the tomatoes and thyme and add to the cheese
  4. Season with freshly ground pepper and bake for five minutes.
  5. Your goat cheese baked in garlic thyme oil is ready to serve!
