Ginger Coffee Popsicles

With summer coming up, these ginger coffee popsicles will make a refreshing snack on a hot day.

  • Coffee
  • Knob of Fresh Ginger
  • 3 tsp sugar
  • Milk
  1. Slice the ginger and place two slices each into 6 espresso cups with ½ tsp sugar.
  2. Brew an espresso and pour over the ginger. Allow to cool, then discard the ginger.
  3. Pour an espresso shot into popsicle molds. Top each with milk and freeze until solid or about four hours.
  4. Enjoy your ginger coffee popsicles on a hot summer’s day, or just when you fee like it!
