- Slice the ginger and place two slices each into 6 espresso cups with ½ tsp sugar.
 - Brew an espresso and pour over the ginger. Allow to cool, then discard the ginger.
 - Pour an espresso shot into popsicle molds. Top each with milk and freeze until solid or about four hours.
 - Enjoy your ginger coffee popsicles on a hot summer’s day, or just when you fee like it!

With summer coming up, these ginger coffee popsicles will make a refreshing snack on a hot day.
