Deconstructed Cannoli

Use your own home made ricotta to add that 'special touch' to this recipe that is perfect for entertaining!

  • 2 cups ricotta cheese
  • 230g cream cheese
  • 1 ½ cups icing sugar (sifted)
  • 1 tsp vanilla extract
  • 3 pita bread rounds
  • 2 tsp cinnamon
  • 1 cup chocolate couverture (dark), finely chopped or shaved
  • Melted butter
  1. To make the pita chips, preheat the oven to 200°C. Brush the whole pita bread rounds with melted butter and sprinkle with cinnamon.
  2. Cut into triangles and place single layer on a baking sheet. Bake in the oven for up to 15 minutes until golden. Remove from oven and cool on a rack.
  3. Next, combine all the ingredients in a food processor except for the chocolate. Process ingredients until smooth. Combine the shaved chocolate with the mixture and place in a serving bowl.
  4. Sprinkle with extra icing sugar and chocolate shavings and serve your deconstructed cannoli.
