Crispy Celery and Pear Salad

Recipe by Tad Lombardo

Pick up some fresh Victorian walnuts at the Sweet and Nut Shop or the Nut Stand.

  • 4 stalks celery
  • 2 tbsp cider or pear vinegar
  • 2 tbsp honey
  • ¼ tsp salt
  • 2 ripe pears (choose a crisp textured pear such as red anjou)
  • 1 cup finely diced parmesan cheese
  • ½ cup walnuts, roasted and chopped
  • 6 cups baby cos lettuce, leaves removed from the core
  • Black pepper, freshly ground
  1. Soak celery in a bowl of ice water for 15 minutes. Drain and pat dry. Cut into 1cm pieces.
  2. Whisk vinegar, honey, and salt in a large bowl until blended.
  3. Slice pears, add to honey mixture and gently stir to coat.
  4. Add the celery, cheese, and walnuts and stir to combine. Season with pepper.
  5. Divide the lettuce leaves evenly
  6. Top with the pear, celery, cheese and walnut mixture.
  7. Your crispy celery and pear salad is ready to enjoy!
