Creamy Mushrooms

This mushroomy recipe is by Anna Webster from this year's MasterChef Series. Have it on toast, drizzled over your steak or by the bowlful.

  • 350 g mushroom (any – try chanterelles or seasonal wild mushrooms)
  • Curly parsley
  • 40 g butter
  • Drizzle olive oil
  • ½ red onion, finely sliced
  • Salt and pepper
  • Garlic
  • 150 ml crème fraiche (can use regular cream)
  • 1 lemon
  1. Melt butter in pan then add splash of olive oil
  2. Add garlic, onion, herbs, S+P – stir 1 minute
  3. Add mushrooms – cook about 8 minutes, or until onions have softened and mushrooms have started to caramelise
  4. Add chopped parsley and stir in crème fraiche – stir until cream comes to the boil, then simmer for 1 minute
  5. Add lemon juice and correct seasoning
