Corn Bread

Recipe by Tad Lombardo

This is delicious! A great side for serving with chili con carne.

  • 1 cup flour
  • 1 cup yellow polenta
  • 2 to 4 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 free range eggs
  • 1 cup milk
  • ¼ cup oil (rice bran or canola)
  1. Preheat oven to 220°C. Grease a loaf tin.
  2. In a mixing bowl stir together flour, polenta, sugar baking powder and salt.
  3. In another bowl beat together eggs, milk and oil.
  4. Add to flour mixture and stir just until batter is smooth (be sure not to over mix).
  5. Pour batter into loaf tin and bake in oven for 20 to 30 minutes until golden brown.
