Belgian Waffles

Recipe by Tad Lombardo

This dish makes any breakfast special. This recipe requires a waffle iron.

  • 1 ¾ cup plain flour
  • 2 tbs sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 2 large, free range eggs, separated
  • 1 ¾ cup milk (full fat)
  • ¼ cup vegetable oil
  • 250ml cream (35% fat)
  • 1 tsp vanilla extract
  • 2 tbs sugar
  • Whipped cream for serving
  • Non-stick spray
  1. Heat waffle iron on to high, preheat oven to 100°C.
  2. Whisk together, flour, sugar, baking powder, salt and set aside.
  3. Whisk together egg yolks, milk, and oil. Add to the flour mixture, whisking just until large lumps disappear.
  4. Beat egg whites until stiff and glossy. Fold into the batter.
  5. Whip cream with vanilla and sugar until stiff peaks form and then set aside.
  6. Spray waffle iron with non-stick spray. Ladle 1 cup of batter into the centre of waffle iron. Close the iron and cook until no steam comes from sides (about 7 minutes.)
  7. Transfer waffles to baking sheet in oven while cooking the remaining batter/waffles.
  8. Serve your Belgian Waffles with whipped cream and drizzle of orange and vanilla syrup
