ANZAC Biscuits

Classic Australian recipe, perfect for lunchboxes any time of year.

  • 125g butter
  • 1 tbs golden syrup
  • 2 tbs boiling water
  • 1½ tbs bicarbonate of soda
  • 1 cup rolled oats
  • 1 cup plain flour
  • 1 cup sugar
  1. Preheat oven to 150°C.
  2. Melt butter and golden syrup over a gentle heat. Add boiling water mixed with bicarbonate of soda.
  3. Pour into mixed dry ingredients and blend well.
  4. Drop teaspoons of mixture onto greased trays and bake for 20 minutes. Remove from oven and cool on trays for a few minutes.
  5. Remove and cool further on racks. Store in airtight containers.
