Simple Christmas Puddings

Recipe by Nick, The Sweet And Nut Shop

This light and delicious version of a traditional plum pudding is simple and super quick!

  • 2 cups self-raising flour
  • 1 cup brown sugar
  • 30g butter
  • 1/2 cup milk
  • 2 eggs
  • 1 cup of the Sweet and Nut Shop’s Christmas dried fruit mix
  • 2 tbsp brandy
  • 1/4 cup icing sugar
  • Glace cherries for garnish
  • Holly leaves for garnish
  1. Place the butter in a saucepan and melt over medium heat until it begins to brown.
  2. Add the fruit and brandy/rum to the pan and cook over a low heat for 5 minutes.
  3. Do not over heat as the mixture may ignite. If this happens, cover the pan with a lid and remove from the heat in that order.
  4. Remove from the heat, then beat the flour into the mixture, followed by the sugar, milk and then the eggs.
  5. Pour the mixture into 6 small, well-greased bowls and cover them with foil or baking paper.
  6. Seal the covers with rubber bands. Pour 3cm of water into a large pan and place the puddings in the water.
  7. Cover the pan with foil, then bring the water up to a simmer and cook the puddings for 25 minutes. Take out and allow to cool.
  8. Sprinkle your simple Christmas puddings with icing sugar and top with a glace cherry and holly leaves.
