Irish Tea Cake

A beautiful and simple cake for every cook to have in their repertoire.

  • ½ cup butter, softened
  • 1 cup caster sugar
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 1 ¾ cups flour, sifted
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk (full fat)
  • ¼ cup icing sugar for dusting
  1. Preheat oven to 175 °C.
  2. Grease and flour a 23cm (9 inch) round pan.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time then stir in the vanilla.
  5. Combine the sifted flour, baking powder and salt; then stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
  8. Cool in pan on a wire rack.
  9. Once cooled, turn out your Irish Tea Cake onto a serving plate and dust with icing sugar right before serving.
