Fresh Fig Salad

A delicious fig salad with the zing of blue cheese and orange zest.

  • ½ cos lettuce
  • ½ radicchio lettuce
  • 10 figs
  • 100g mild blue cheese
  • 50g pine nuts
  • 1 egg
  • 2 tbsp olive oil
  • 1 glove garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp orange rind
  1. Whisk the egg with the orange rind, salt and pepper.
  2. Grate the garlic into the egg mix then continue to whisk, pouring the oil in slowly so the mix thickens slightly.
  3. Break the leaves off the radicchio and use them to line a shallow bowl.
  4. Break the cos lettuce leaves into small pieces and place in the bowl.
  5. Halve the figs and add to the bowl then crumble in the blue cheese and pour the dressing over the salad.
