Chocolate Pizzelles

Recipe by Tad Lombardo

You will need a pizzelle iron (stove top or electric) to make these chocolate treats!

  • 1¼ cup plain flour
  • ¼ tsp sea salt, fine
  • ¼ cup cocoa powder
  • 3 large free range eggs at room temp
  • 1½ tsp baking powder
  • ½ tsp finely grated orange zest
  • 1 tsp cinnamon
  • 1 cup sugar
  • ½ cup butter, melted and cooled slightly
  • Vegetable oil spray
  • Icing sugar for dusting
  1. Sift the flour, cocoa powder, baking powder, salt and cinnamon in a large bowl. Then whisk in the orange zest until well combined.
  2. In another medium bowl, whisk the eggs, sugar, and melted butter until smooth and well combined.
  3. Create a well in the centre of the dry ingredients and gradually whisk in the liquid ingredients into the flour to make a thick batter. Fill the pizzelle batter into a large pastry bag with a large round tip.
  4. Preheat the pizzelle iron for 10 to 15 minutes. Lightly spray the surface with a vegetable oil spray. Pipe or spoon a tablespoon of the batter into the centre of each cookie imprint. Close the iron and cook until steam comes from the iron about 30 to 40 seconds. Open and remove the cookie from the iron and repeat.
  5. Once cooled, dust the chocolate pizzelles with icing sugar to serve.
