Zucchini Bread with Marscapone Honey Spread

Ingredients

3 Cups All Purpose Flour

1 tsp Salt

1 tsp Baking Soda

1 tsp Baking Powder

3 tsp Cinnamon

3 Free Range Eggs

1-Cup Vegetable Oil

2 1/4 Cups Sugar

2 Cups Grated Zucchini (Skin on)

1 cup Chopped Walnuts

3 tsp Vanilla Extract

 125g  Mascarpone Cheese

3 tbs Honey 

Delicious bread with an even more delicious spread.  Recipe by Tad Lombardo.

Method

STEP 1

Grease and flour two 8 by 4 inch pans and preheat oven to 165°C.

STEP 2

Sift flour, salt, baking powder, baking soda & cinnamon together in a bowl.

STEP 3

Beat eggs, sugar, oil and vanilla in a bowl. Add sifted ingredients to the creamed mixture and beat well. Stir in Zucchini and nuts until well combined. Pour batter into prepared pans.

STEP 4

Bake for 40 to 60 minutes or until a tester inserted in the centre comes out clean. Cool in pan on a rack for 20 minutes. Remove bread from pan and cool completely.

Combine the mascarpone and honey and spread on bread to serve.
